Mint, Chocolate Cheesecake

This recipe of Mint & Chocolate Cheesecake

makes 6" round cake tray


KITCHEN TOOLS:

  • Scale

  • Food Processor

  • High-Speed Blender

  • 6 Inch Cake Tray

  • Baking Paper

  • Spatula

  • Spoon

BASE INGREDIENTS:

  • 75g Oats

  • 75g Tiger Nuts

  • 25g Cacao Powder

  • 75-100g Dates

  • 1-3 tablespoons Water

INSTRUCTION:

  1. Combine oats, tiger nut, cacao powder and dates in a food processor. Blend the ingredients until a cohesive mixture forms.

  2. Add water and blend it again to achieve a sticky, dough-like consistency.

  3. Line a baking tray with parchment paper and transfer the mixture to the tray and spread it evenly.

  4. Use your palms to press it firmly, and smooth it out with the back of a spoon.

  5. Set asiade until ready to use.

MINT CRREAM INGREDIENTS:

  • 125g Cashew Nuts, soaked

  • 100g Young Coconut (frozen or fresh)*

  • 15g Mixed Green Superfoods (Spirulina, Chlorella, Wheatgrass, Barleygrass)

  • 65g Maple Syrup

  • Juice from half a Lemon

  • 100g Coconut Oil, melted

  • 15g Irish Moss**

  • Pinch of Sea Salt

  • 25g Xylitol

  • 5-10 drops of Peppermint Oil

INSTRUCTION:

  1. Place all the ingredients except for the coconut oil and cacao butter into your blender. Start blending at a low speed and gradually increase to high until the mixture becomes smooth.

  2. Once the mixture is smooth, introduce the melted coconut oil and blend again to achieve a perfectly combined consistency.

  3. Pour the minty blend into your cake tray, spreading it evenly. Place the tray in the freezer to allow the Mint Cream to set.

*if you don't have a coconut (fresh or frozen one ) you can use soaked coconut flakes or just add more cashew nuts

** Irish moss adds a smooth and creamy texture to the cake, enhancing the overall taste and mouthfeel. It is also believed to provide various health benefits, such as aiding digestion, supporting gut health, and boosting the immune system.


CHOCOLATE CREAM INGREDIENTS:
  • 250g Cashew Nuts, soaked

  • 100-150g Water / Plant based milk

  • 80g Coconut Sugar

  • 75g Cacao Powder

  • 100g Cacao Butter, melted

  • 15g Tamari

  • 5-10 drops Vanilla Oil

  • Pinch of Sea Salt

INSTRUCTION:

  1. In your blender, combine all the ingredients except for the cacao butter. Begin blending at a low speed and gradually increase to high until the mixture achieves a smooth and velvety consistency.

  2. Once the blend is smooth, add the melted oil and blend again. This step ensures a perfect integration of all the ingredients, creating a decadent and silky chocolate cream.

  3. Transfer the chocolate cream into your cake tray, spreading it evenly. Place the tray in the freezer to allow the cream to set into a firm and luxurious layer.

  4. When removing the cake from the freezer, allow it to defrost slightly before slicing. For even and clean cuts, heat your knife before each slice and wipe it clean. This ensures a smooth and professional presentation.

*start with less water and sugar then add more if needed.
